This is a light and easy dish for those busy days. Packed with protein and it's low-fat. What more could you ask for? You can switch out the chick peas for beans or olives, and you can use really any vegetable you want in replace of the broccoli. This just happens to be what I had on hand.
I can really come up with a thousand different macaroni dishes. It is SO versatile and affordable. It goes with virtually everything. Soups, stews, salads, side dishes, main meals, oh I could go on and on!
With simple macaroni dishes like this, I always cook it in chicken broth. It gives it more flavor when you aren't using gravy or some type of sauce to put on top of it. And what's great is, it's easy to re-heat and have the next day. I was just cooking for myself tonight so by all means, make as little or as much as you need.
1/2 cup macaroni of your choice
Handful of chick peas
Handful of broccoli
Low-sodium chicken broth
1 garlic clove, chopped (optional)
2-3 slices of turkey bacon. (you can use regular lower fat bacon)
Cheese to sprinkle over top
Extra virgin olive oil to drizzle
Cook the macaroni in the chicken broth. Cook the bacon in a pan and set aside. In the same pan you used for the bacon, saute' the broccoli and garlic until done. I like a little crunch on mine so maybe only about five minutes for me. Add in the chick peas and stir just until heated through. You could also cook the broccoli in the chicken stock as another option. Pour the macaroni onto the plate, add in the broccoli mixture and crumble bacon on top. Drizzle with olive oil and sprinkle on some cheese. There you have it. Quick, easy, flavorful and low-fat.
