Orzo with Shrimp & Zucchini
I still have an empty nest for at least another week. I'm barely hanging on! Last night I wasn't that hungry so I made something light. I feel bad calling it cooking, because it needs very little effort. Quick, easy and very simple.
1/2 cup orzo pasta, cooked
6 raw shrimp, fresh or frozen
1/2 a zucchini, chopped
1/4 of an onion, chopped
Handful of basil, sliced into ribbons
Toss the orzo with a little olive oil and grated cheese. Cook the shrimp with a little olive oil on each side for about two minutes. You can watch them turn pink and curl. What you don't want is to over cook them, or you'll be eating rubber. So watch carefully, no more then 2-3 minutes on each side.
Next saute' the onions and zucchini together with a little salt. Cook about 5 to 8 minutes or until tender. Toss the shrimp and zucchini mixture in with the orzo, top with basil, serve and enjoy!
