Shrimp Salad
Did you ever wake up, look outside, see nothing but clouds & decide to clean house? Well that was me today. I have my morning cup of coffee & I waste no time getting to ripping apart my kitchen & do all that tedious cleaning we all hate so much. I'm knee deep in canned goods, spices, & cleaning products & what do I see? Why the sun of course. It decides to show it's face! Well ain't that a kick in the pants! It's ok at least I have a nice clean condo :)
Ok so now I'm starving, empty nest, what can I make quick? Shrimp Salad that's what! I only made a small portion, so as always double or triple if you need to.
12-15 uncooked, frozen peeled shrimp (fresh shrimp works too)
s/p to taste
1/4 cup fat free sour cream
1 tablespoon fresh cilantro, chopped
1 teaspoon fresh chives, chopped
1 teaspoon smoked paprika
Juice of half a lime (you can use lemon instead)
1 stalk of celery, chopped finely, leaves and all. (leaves have tons of flavor)
Heat a little olive oil in a pan. Cook shrimp for two minutes on each side. Transfer shrimp to a bowl and set aside. Chop your fresh herbs and celery. Add to the shrimp. Next add in the lime juice, s/p and taste. Add more if you need too. Finally add in the sour cream and fresh herbs, mix until well blended. Cover and chill in the fridge until ready to use. Spread it on a roll and add some greens. Feel free to change up the herbs here. This is just what I happened to have on hand. Tarragon would go well with this, even dill. As I always say, use as much or as little as you would like. It's all about what your taste buds enjoy!
