Spice Rub Salmon & Roasted Corn Salsa
Spice Rubbed Salmon with Corn Salsa and Watercress Salad!
Roasted corn salsa:
One ear of corn
1 small onion
2 cloves of garlic
1 red bell pepper
1 lime, s/p to taste
Handful fresh cilantro & fresh dill.
Roast all the veggies with salt/pepper and olive oil on 350 for about 12-15 minutes. Squeeze on the lime, add in the fresh herbs, a little more olive oil, stir and pop in the fridge covered for at least a half hour.
Spice rubbed Salmon:
1 teaspoon of chili powder
1 teaspoons of onion powder with parsley and dill
2 teaspoons of cumin
Salt and pepper to taste
Crushed red pepper flakes (you determine how much)
2 tablespoons brown sugar
I only made one salmon fillet. This is obviously too much rub for just one fillet. Keep in an airtight container to use for another time.
