Two recipes in ONE post! Whoa! Either this is a special treat or I'm getting lazy in my old age? Let's go with the first choice shall we?
So I'm the crazy one who ran my oven over the Memorial Day weekend. But these are just soo good! Plus I have central air so it saved me. Of course you could cook these on the grill if you wanted too. Just wrap the potatoes up until tender, scoop out the inside, stuff them and put them back to the grill. Not sure if you would get the crisp edges or the melty cheese to work though hmmm. Something to ponder if you wanted to. Now the burgers well those are easy!

Asian Burgers:
1 pound beef
2 tablespoons Sherry
1/4 cup Low Sodium Soy Sauce
1 tablespoon bbq sauce (homemade or store bought)
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon ginger
salt/pepper to taste
In a large bowl mix all the ingredients together. Don't be afraid to get dirty and use your hands here. You really want that good flavor throughout the entire burger. I made four equal patties but that depends on just how big you want these
Next heat a griddle and cook 4 to 5 minutes on each side, depending on how well done you want these. The choice is yours. You can top these with red onion, red pepper, and or lettuce. Super easy, packed with great flavor and great for the summer time!
Onto the twice stuffed potatoes!
4 to 5 red potatoes
1/4 to 1/2 cup Ranch Dressing
1/4 cup deli ham, chopped
1/4 cup broccoli florets, stems removed
1/4 cup mozzarella cheese (or cheese of your choice)
Preheat oven to 350
Place potatoes on a baking sheet and pierce holes throughout each potato with a fork. Bake for about an hour or until tender. Take them out and let them cool on a rack for about 5 minutes or until cool enough to handle. Cut once in half and scoop out the inside. Reserve the inside of the potato and place into a large mixing bowl. Add salt and pepper to taste. Ranch dressing a quarter cup at a time, ham and broccoli. If you think it needs more Ranch Dressing then go ahead and add in some more. You can mash the potato first and then add in everything else, or you can leave it a bit chunky how I enjoy them.
Next you want to preheat the oven to 425
Place each potato half on a baking sheet. Spoon some potato mixture into each one filling them as much as you can. Top with cheese and bake for about 15 minutes or until golden brown and the cheese is nice and melty.
