Bacon Ranch Potato Salad w/a Twist






I HATE Potato Salad!  That's right. I hate it. I hate the mayo taste, I hate the texture of it, I hate everything about it. So a few years ago I decided I'm going to make it MY way. I don't boil the potatoes, I bake them up nice and crisp. I add Ranch Dressing instead of Mayo & well I mean who doesn't love bacon?!  Memorial Day weekend is coming up and what a great dish to bring to your Aunt Gertrudes party!  You can serve this for parties or at your family dinner table. I hope you enjoy this :)


5 Red potatoes, cubed and skins left on
5 slices of bacon
1/4 to 1/2 cup Ranch Dressing
2 stalks celery, diced small
salt/pepper to taste
Extra Virgin Olive Oil


Preheat oven to 400


In a large mixing bowl; combine the potatoes, salt, and pepper. Drizzle the olive oil and coat the potatoes well. Once the potatoes are all mixed, lay them out evenly on non-stick baking sheet. Bake for 15 minutes, stir them around and bake 15 minutes more. Transfer the potatoes to a dish and let them cool. On the same baking sheet lay the bacon out. Bake for about 10 to 15 minutes or until the bacon is nice and crisp.  In a large bowl pour the potatoes in, crumbled the bacon over top and add the celery. Give it a good toss and fold in the ranch dressing a 1/4 cup at a time. You may need more or less depending on the size of the potatoes you used. Enjoy!
