Cherry Cookies

 



One stick of butter
1/2 cup sugar
1 teaspoon Almond Extract
1/4 teaspoon ginger
1/4 teaspoon salt
1 large egg
1 1/4 cup flour
3/4 cup candied cherries, chopped


In a large bowl, beat the butter, sugar,  almond extract, ginger, and salt until light and fluffy, about 2 minutes, then beat in the egg. Add the flour and beat on the lowest speed until just blended. Using a wooden spoon, stir in the dried cherries.
On a long strip of plastic wrap lay the dough out.  Roll into a long log, wrap and place in the fridge for at least two hours.  Remove plastic wrap and cut about 1/2 in slices and place on cookie sheet w/parchmont paper, about 1 inch apart.  Preheat oven to 350 and bake for about 15 minutes.  Transfer to a wire wrack and cool.
In a crock pot melt 1 cup of milk chocolate chips. Frost on half the cookie and decorate with desired toppings.  I used coconut, health chips, marshmallows, white chocolate chips and red sprinkles.  You can even get creative like the picture below with scewers and cotton candy to hold them in place........
