Chicken Pesto Pizza



My son has stoned me for about three years now that he wanted to take  Karate classes. He is now eight and I have decided it's time. Sigh.....my baby is growing up so quickly!  In any event we now have Karate after school Mondays and Wednesdays. Along with his new challenge I now have one as well. I'm on borrowed time to get dinner done! My son is home from school by 4, Karate @ 4:30, home by 5:30'ish. He's usually in bed by 8!!! Let's not forget homework and shower too! Yes I've thought about having him shower in the morning. However much like his mommy, this child is no way a morning person! Now that you have my life story let's get to my challenge! Quick Meals!  Ahhh what are those? Meal #1.......


2 slices of round Nan bread.
1 large roasted red pepper ( I used jarred )
1 clove garlic, minced
About 1/4 cup extra virgin olive oil
Fontina Cheese
Part Skim Mozzarella
1 cup fresh Basil Leaves
1 tablespoon toasted Walnuts
1 boneless skinless chicken breast, cooked & cubed
artichokes (optional)
2 slices bacon (you can use turkey bacon)
Portobello mushrooms
salt & pepper to taste


Preheat oven to 400
In a blender throw in red pepper, basil, salt and pepper, olive oil and walnuts. Blend, blend blend!  Taste it, add salt & pepper, taste again.  Is it good? Of course it is! Ok now you have pesto sauce. Top your nan bread with the pesto as you would a red sauce. Now top the bread with the chicken, mushrooms, artichokes (if using), cheese and top with bacon. Pop them in the oven for 8 to 10 minutes. You decide how crispy you like it. Cut, serve and devour!
