Cranberry-Orange Bread

 
Ok so this bread is a lighter version.  It wasn't as mosit as I would like.  However it's packed with tons of flavor, and knowing that there is no butter and not as much sugar as other breads makes it worth while to me.


2 cups all purpose flour
1/2 cup brown sugar
1/2 cup white sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup dried cranberries
2 tablespoons chopped candied orange rind
3/4 cup orange juice with some pulp
2 eggs
1/4 cup extra virgin olive oil


Preheat oven to 350.  Butter and flour a loaf pan


Whisk together all the dry ingredients in a medium bowl.  In a separate bowl, cream together all the wet ingredients.  Slowly add in the dry to the wet.  Mix until well incorporated.  Pour into the loaf pan and bake for about an hour or until a tooth pick comes out clean.
