
This is my very first fruit tart. Going into this I had a general idea on how they were made but not completely. So I winged it! Puff Pastry for the crust, assorted fruit and Sugar-Free Orange Marmalade. I have never eaten one so I had nothing to compare it to. However I must say it was delicious and gone in a day!
1 Puff Pastry (half box)
1 teaspoon sugar
1/2 cup sugar-free orange marmalade
strawberries, blueberries and pineapple (or choose your own fruit)
egg wash (one egg, teaspoon of water, mix)
Preheat oven to 400
Let the Puff Pastry thaw and come to room temp. Roll it out a bit to get rid of the creases. Lay it on a non-stick cookie sheet and brush on egg wash. Sprinkle 1 teaspoon of sugar over the whole pastry. Bake for about 15 minutes or until light golden brown. After about 10 minutes take it out and pierce holes with a fork to prevent over puffing. Take out and let cool. Slice the strawberries and pineapple as desired. Next you want to layer one type of fruit at a time starting from the outer edge of the puff pastry. Usually larger fruit on the edge to smaller in the center. Work your way to the center continuing to layer the fruit one row at a time. Once finished. Heat the marmalade in the microwave for about 30 seconds. Stir really well and drizzle over top of the fruit tart. Refrigerate until cool or serve warm.
