Meatball Stuffed Pancakes



I know what you are all thinking.  YUCK!  Just hear me out on this one.  Today is National Pancake Day.  I challenged myself to think out side of the box.  I had this recipe all thought up and could taste it before I even made it.  I even told a friend about it first thing this morning.  He couldn't get the "sweet" out of his head.  When you hear pancakes that's what you think of, right?  This pancake is savory, w/herbs in it.  It honestly tastes like Italian bread w/meatballs inside.  Def. try this!


1 cup of pancake mix
3/4 cup of water
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon parsley
salt/pepper to taste
1 teaspoon fresh thyme
1 teaspoon fresh basil
Meatballs
Gravy a.k.a. Red Sauce
Mozzarella Cheese


Preheat oven to 350
Whisk pancake mix and water together. Stir in seasonings and fresh herbs.  Pour 3 tablespoons of the mixture in a hot griddle, spread to be as big as you can make it.  Repeat this step for all the pancakes.  You should get four maybe five out of this. Once pancakes are cooked let cool for a minute.  Place cut up meatballs inside the pancake with a sprinkle of mozzarella. Roll up tight, place in a glass baking dish, top with a little Gravy and Mozzarella.  Bake for 5 to 8 minutes or until the cheese has melted.  Serve and I'm telling you, you will enjoy this!
