Mushroom & Bluecheese Burgers w/Peach Salsa








Cheese, Mushrooms, Peach Salsa? How can you go wrong? And they are made with Turkey instead of beef! So have two :) These were really a big hit at my house. They are very filling but were gone within a half an hour. 




For the Burgers:
1 package ground turkey
1 4 oz container blue cheese
1/2 cup portobello mushrooms, chopped
sea salt/pepper to taste


Combine together in a large mixing bowl. Form into 1 inch thick patties. Grill until done! These just take about 6 minutes on each side.


Peach Salsa:
2 ripe peaches, skin removed & chopped
1 small red pepper, finely chopped
1 small green pepper, finely chopped (you can use a hot pepper)
1 small onion, finely chopped
2 cloves garlic, minced
1 avocado, chopped
1 large tomato, chopped
1/4 cup cilantro, chopped
sea salt/pepper to taste
1 teaspoon crushed red pepper (optional)
juice of 1 lime
2 tablespoons extra virgin olive oil


Mix everything in a bowl. Cover & place in the fridge for at least an hour. The longer you let it sit in the fridge the more flavor you will get!!
