Savory Pancakes

 
I don't usually eat breakfast.  I know, I know, I should!  Coffee is the only thing I have in the morning.  Horrible isn't it?  Well today was a rare morning.  I had a craving for Savory Pancakes.  Although I've never eaten them nor made them (until today). I wanted it!


1 cup of your favorite pancake batter
salt and pepper to taste
4 slices of Turkey bacon cooked and crumbled
4 grape tomatoes thinly sliced
3 green onions chopped
2 tablespoons fresh cilantro
1/4 cup of Mexican cheese blend.


Mix everything together in a bowl.  Heat a pancake pan (flat iron pan) Pour 1 to 2 tablespoons of pancake batter and cook until light brown.  Flip and cook the other side.  Be creative with these.  You can roll them up and tie them with green onion.  Pour Gravy over the top.  Serve with vegetables or eggs.  You can even use Maple syrup!!  Try mozzarella cheese, or fresh basil.  Be creative, have fun and enjoy!!
