Watermelon Sorbet


I think I should call this Watermelon-Strawberry Sorbet. But honestly the Watermelon really comes through more in this treat.

 



Ingredients:

I used a half of a watermelon. I broke it down and after it's pureed it's about 6 cups. So cubed it would be 10 cups.

1/2 to 3/4 cups of sugar depending on your taste buds

2/3 cup of Cranberry/Raspberry juice of your choice. You can also use Tropical Crystal Light (has no sugar) for a Tropical Watermelon Sorbet

2 packets strawberry jello (you can use unflavored instead)

juice of 1 lime

In a food processor, puree the watermelon. Stir in the sugar. Now if you are going to use a sugar free liquid or unflavored jello, I would consider using just a touch more sugar. It really depends on how sweet you like things. So taste as you go along. While you are pureeing the watermelon, in a pan over medium heat; pour your liquid and jello. Stir until it dissolves, turn off heat and let sit about five minutes. Squeeze in the lime juice and stir it into your watermelon mixture. Pour it into a glass baking dish with a lid and freeze for about 4 hours. Serve on a watermelon slice, or plain, garnish with mint or basil if desired.

Be creative. You really can use whatever flavor jello or liquid you would like. Use strawberries instead of watermelon for a strawberry sorbet. The sky is the limit. Have fun!
