Grilled Spice Rubbed Salmon & Grilled Salsa w/Bacon


It's three in the afternoon and I'm starving. I skipped breakfast....and lunch. :::Hands head in shame::: I actually slept through breakfast. It's so very rare that I ever get to do that, but with an empty nest? I guess I needed it. My eating and sleeping habits get all wacky when my little guy isn't home. You finally get the t.v. to yourself, and you find a really good show and before you know it, it's 2 a.m.! Ok, so here is what I whipped up!

Keeping in mind this is just for one, double & triple the recipe as needed. 

For the Salmon:

4 oz. Salmon fillet
chili powder
cumin
oregano

For the Salsa:

3 Strips of Bacon, chopped
1/2  Yellow bell pepper (any color of your choice)
1/4  Red onion, sliced
1 Clove garlic, kept whole
1 Tablespoon fresh chopped cilantro
Juice of 1/2 a Lime


Ok when you are cooking for one, sometimes there just aren't any real measurements. I sprinkled some cumin, a little bit of oregano and chili powder into a bowl. I rolled the salmon fillet in it covering each side, and let it hang out for a few minutes.
In a grill pan, I added the bell pepper, red onion and garlic clove. Just a few minutes on each side, until the veggies are nice and tender. Be sure to coat them in olive oil and sprinkle on some salt before adding them to the pan.
In a frying pan, I fried up the bacon and cooked it up. Once the vegetables were done, I let them cool for a minute. I then added the salmon into the grill pan. While the salmon is cooking, chop the vegetables and then add them into the bacon pan. I mixed everything real well, added the cilantro and lime juice
I plated a heaping scoop of the grilled salsa and bacon onto my plate and laid the salmon down on top. Garnish with a lime wedge (optional) or cilantro. Enjoy!
