Pumpkin Cannoli w/Nutella & Butterscotch Chips
Ok so today I was feeling adventurous. I had been thinking about this idea for a while now, just never put it into motion. This tasted really good, it was a big hit at Sunday dinner. The texture isn't quite like the classic cannoli, I'm still working on it. But I like to teach people to be creative in the kitchen and put your own spin on things. So this is what I came up with.
3 Cannoli Shells (I usually make my own, but w/an experiment I didn't bother)
3 heaping tablespoons of ricotta cheese
3 heaping tablespoons of pumpkin puree
1 shake of nutmeg
2-3 shakes of cinnamon
1 teaspoon granulated sugar....powdered sugar may get you the texture I was looking for.
Nutella
Butterscotch chips
Drain the ricotta and pumpkin really well. Use a sieve or, a strainer, or even a cheesecloth. Get all that moisture out. In the meantime dip the cannoli into Nutella, add the butterscotch chips, set aside and let dry. Mix the ricotta and pumpkin together real well, add the sugar, a shake of nutmeg, and a couple shakes of cinnamon and mix again really well. Spoon the filling into a pastry bag and fill each cannoli, serve right away or they will become soggy. I'm going to continue to play with this idea, and post any winners!
