Hot-N-Honey Chicken Wings


If it wasn't 9:30 in the morning, I would have a shot of something strong as I write this one up. Oh the horror! This was the first time I ever made homemade chicken wings. Why on earth didn't anyone tell me to buy frozen chicken wings already butchered and cute like?!?  I know, I know, because fresh is better, yada, yada!

Now if you don't have a weak stomach, this recipe is a walk in the park. Although butchering wasn't my favorite part of making these, I honestly would do it all over again. They were just that good. Now when I bought the fresh chicken wings, I thought oh how cute, and how cheap! Score! Until I opened the package and they looked like this......

See even I don't know all there is in the kitchen! Always learning, and I love it, ok this one not so much.

So this is what I was thinking Saturday night when I opened them.... it's pretty late, and by the time take out get's here it will be too late. So time to push the sleeves back, put my big girl panties on and get to chopping!

I probably did it all wrong, but here goes, I felt for the bones and it seems you get one "drum" and one "wing" in each one. So I cut it up the middle and snapped them in half. Well now you have that sharp part sticking out of the side there you see it? Cut and snap that off and put it aside. I trimmed down some of the fat, not worrying too much if it was pretty, it will render off in the oven.

Are you with me so far? Ok good. Here is what you want them to look like:

Preheat oven 425

You want to place wire racks on two cookie sheets. Place the cleaned, dried wings on top of those racks. This will allow circulation to flow through the wings while being baked off. I baked mine for an hour, turning once about halfway through the baking process. You want them with a crisp and fat rendered off.
Take them out of the oven. Set aside to let cool for a couple of minutes. In the meantime in a frying pan, heat 1/2 cup of Franks Hot Sauce, 1/2 cup Honey, and 2 tablespoons of butter. Once it's all melted and mixed well, add in the wings until they are well coated.
This recipe was for about 40 wings. I made a chicken stock with the rest of the un-used chicken. That will be my next recipe.
Note* if you want it hotter, use more hot sauce, sweeter, more honey. Completely up to your taste buds.
