Hey I haven't forgotten about you all. Sometimes life gives you bumps in the road and takes you away to other places. A lot of time spent with family over the past couple of weeks. Really puts things in perspective when dealing with family issues. Reminds you just how fragile life really is. So give an extra hug to those you love today.
What a great first recipe to come back to. Something nice and comforting, and not so bad for your waist line either! Perfect for fall with the flavors if cinnamon, walnuts and bananas. I saw the originally recipe from this lovely lady over at the "Skinnytaste" http://www.skinnytaste.com/2011/04/chewy-low-fat-banana-nut-oatmeal.html. The only thing I did differently was add in some applesauce in replace of the butter. Just a 1/4 cup and it was flavored with apples and peaches.
These were extra special because my son pushed up his sleeves and baked with me! He hasn't done that in a while since he's all "grown" and stuff now :) He couldn't stop eating them! And I gotta be honest, it was difficult to only have just two myself!
Ok onto the recipe:
1 cup all-purpose flour (you can use half wheat flour if desired)
1/2 brown sugar
1/2 cup white granulated sugar
1/2 teaspoon cinnamon
1/2 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 cup of applesauce ( I used apple/peach flavored)
1 large egg
1 large very ripe banana
2 cups of quick rolled oats
3/4 cup chopped walnuts
Preheat oven to 350
In a bowl whisk together, flour, cinnamon, salt, and baking powder/soda.
In a different bowl cream together the sugars and applesauce.
Add in the egg and banana.
Now combine the dry and wet mixtures together.
Stir in the walnuts.
Drop heaping tablespoons of the cookie dough onto the cookie sheets.
Bake for 10-12 minutes. I found that 12 minutes was perfect, however every oven varies.
Poor with a glass of skim milk and enjoy, but only two!
