Stuffed Zucchini
I served these up for Thanksgiving, however anytime is a great time to serve them! Another great Italian-American dish coming at ya...
2 zucchini, cut ends cut off, cut in half, and pulp scooped out (save pulp)
1/2 cup plain bread crumbs
1 clove garlic, chopped
1/2 cup marinara sauce
s/p to taste
Preheat oven to 375
Once you've prepared the zucchini it should look like this...
Heat some olive oil in a skillet. Add in the pulp, garlic and breadcrumbs. Cook for about 5-6 minutes until the breadcrumbs are nice and golden brown, zucchini is tender and garlic is fragrant. Let it cool just a little bit. Pour a thin layer of marinara into a baking dish. Mix the pulp filling with the marinara sauce, add in some grated cheese. Fill each zucchini half and lay in the baking dish. Any mixture left over top the zucchini off and more grated cheese. Bake for about 20 minutes or until fork tender. Enjoy!
Other variations can include prosciutto, some wine, different cheeses etc. Have fun w/it!
