Okay Christmas cookies are out and healthier eating is in! Can you believe I got a catalog for new swimwear already? I can't even think of that right now. I need to get rid of what I ate in December! I bought a bag of apples the other day. When I opened them up they were pretty banged up. No need to throw them away! These are great for baking. Since we're on a healthier kick in my house, they are great for snacking, or in the morning with breakfast.
1 cup all purpose flour
1 cup whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup packed brown sugar
3 teaspoons of cinnamon (you can use less I just love it)
2 large eggs
1/2 cup fat free milk
1 cup fat free vanilla yogurt (I used Dannon light and fit)
3 mcintosh apples, peeled, cored, diced
Preheat oven to 350
Combine all dry ingredients in a bowl and set aside. Using a mixer combine all the wet ingredients together into a separate bowl. Slowly incorporate wet ingredients into the dry. Fold in the apples. Using muffin liners, line a 12 cup muffin tin. Spoon in two heaping tablespoons into each muffin cup. Bake for about 18 minutes or until a toothpick comes out clean. Cool, store in an airtight container or inhaled one right away like I did. Enjoy!!
