Salmon w/Whole Grain Sofrito Couscous, Spinach & Walnuts
I was not feeling too hot yesterday. I didn't want to cook at all. However when the little guy says he's hungry, you feed him! Remembering I had fresh Salmon in the fridge, I figured well that's easy enough! I also had some whole grain couscous on hand, a little bit of spinach that needed to be used up and walnuts too. So this is what I came up with...
Three Salmon Filets about, 5 oz. each
8 sprigs of fresh dill
Juice of 1 lemon (optional)
2 cups of fresh spinach
1 box "Near East" whole grain couscous
Chickpeas (I used canned, you can use fresh)
3 tablespoons of Sofrito (you can find this in the international section)
Handful of Walnuts
1 clove garlic, chopped
Set your broiler to lo heat. Make sure the top rack is about 3-4 inches from the flame. I cooked mine on foil, you can use non stick spray on a cookie sheet. Place your Salmon down, a little lemon if desired, s/p to taste and the fresh dill. Broil the salmon for 12-15 minutes or until opaque in color.
While the Salmon is cooking start the couscous. Cook as directed on the box (I cook mine in chicken stock, it adds SO much more flavor). Now you don't have to used boxed couscous. You can use whatever you'd like. This serves 3-4 people just keep that in mind.
Once the couscous is finished, heat some olive oil in a skillet, saute' the garlic, add the walnuts and cook until fragrant. Put the garlic and nuts aside. Add in the couscous, the Sofrito, spinach and chickpeas, stirring until heated through and the spinach is wilted. Stir in the walnuts and garlic. Place the couscous down first and lay a salmon filet over top. Enjoy!
