Apple Cranberry Cake




1 cup Whole Wheat Flour
1-1/2 cup All Purpose Flour
1 teaspoon salt
2 teaspoons baking powder
1/2 teaspoon baking soda
1 cup brown sugar
3/4 cup granulated sugar
4 eggs
3/4 cup extra virgin olive oil
1/4 cup dried cranberries
1/4 cup apple cider
1 teaspoon cinnamon
1/2 teaspoon ginger
1/4 teaspoon nutmeg
3 small apples ( I used golden delicious )


Preheat oven to 325

In a microwavable bowl add the cranberries and apple cider. Pop in the micro for 30 seconds. Give it a good stir and set aside.

Add all ingredients together except for the apples and cranberries. Blend well. Stir in the apples and cranberries. In a buttered and floured  square baking dish pour in the batter. Bake for about 1 hour or until a toothpick comes out clean.


I felt it needed a little more "something" So I added a vanilla glaze. Real simple: 1/2 cup confectioner sugar, a few tablespoons of milk and vanilla (optional) mix well and drizzle over the top. Enjoy!
