2 cups long grain rice
1 medium onion, chopped (yellow)
1/4 cup Sofrito
Adobo Seasoning
2 packets Sazon with Coriander and Annato
4 cups chicken stock
Saute the onion until translucent about five minutes. Stir in the sofrito and sazon until warmed through. Pour the rice in the pot, sprinkle in some adobo and give it a good stir. Pour in the chicken stock, bring to a boil, cover, reduce heat to low and let simmer about 20-25 minutes until water is absorbed and rice is nice and tender. Do not keep lifting the lid! Wait 20 minutes and then check it. Trust me! Let it sit for a couple minutes then serve.
