Frittata with Prosciutto, Broccolini, & Mushrooms

Have you noticed nothing goes to waste in my home? I had left over Prosciutto and Broccolini from last nights dinner, so what better to make then a Frittata! Of course you can use whatever you have on hand, this is just one of the many ingredients you can add.

3 large eggs, beaten
1/4 cup milk
handful of Mozzarella
1/4-1/2 cup broccolini, chopped
2 slices of prosciutto
2 fresh sage leaves, chopped
2 portobello mushrooms

In a large bowl mix together the cheese, milk, eggs, prosciutto, sage and mushrooms. Pour into a small oven proof pan with melted butter. Or you can use a spray for less calories. Cook until it starts to bubble and top it off with the cooked broccolini. Now I didn't use any salt because there is plenty from the prosciutto, and cooked broccolini. Now if you were using fresh veggies, sauté them first adding the salt then. Bake in a 400 degree oven until light golden brown 10-12 minutes. Let cool for five minutes. Gently use a spatula to remove from the pan and let cool on a wire rack another 5-8 minutes. Serve with either some greens or the fruit salad below.  Enjoy!
You can double and even triple this recipe for more then 1-2 people. Of course, you would just need a bigger pan.

1 Macintosh Apple
1 Orange
Ground Ginger

Slice the apples and oranges up. Sprinkle on some ginger, give it a good toss and taste for seasoning. Serve and enjoy!
