Oatmeal Apple Crisp w/Frangelico & Orange
Tis the season for all those warm comforting baked goods. Fall is my favorite time of year when it comes to the culinary world. I love all the smells and colors and great warm feelings you get. I myself have always loved a nice oatmeal crunch topping. I put a little twist on this by getting the apples drunk with a little help from Frangelico & some freshly squeezed orange juice. You can of course omit the boo's and enjoy it without.
Filling:
6 apples, peeled (optional), cored, and diced as you wish. (I used Eastern Apples & a couple Red Delicious)
1 1/2 teaspoon Cinnamon
1/2 teaspoon Nutmeg
zest & juice of 1 lemon
zest of 1 orange & half the juice (unless it's a small one then use all)
Granulated sugar, use 1/2 cup at a time, add more for desired sweetness
2 shots of Frangelico (optional)
Topping:
1 cup of flour
1 cup of granulated sugar
1/2 teaspoon of salt
1 cup of oatmeal
1/2 pound cold butter, diced
Preheat oven to 350
Butter a baking dish (9x13)
Combine the apples, frangelico, lemon and orange juice together and let sit a few minutes. In the meantime, mix together sugar, cinnamon and nutmeg. Add this to the apples, give a taste and add more sugar if needed.
In a large mixing bowl add the flour, sugar, salt, oatmeal and a dash of cinnamon (Optional)
Using an electric mixer, mix in the butter until the mixture is nice and crumbly. You're looking for coarse pieces. Pour over top of the apple crisp and bake until light golden brown and bubbly about 30-40 minutes. Enjoy!
Let cool at least ten minutes, cut and serve with ice cream. I loved this one with Creme Brûlée ice cream, yum!
