Orange Chicken, Broccoli & Mushroom Stir Fry
I have an empty nest this weekend, so this only makes enough for about 3 small plates. Feel free to double it up. Also, the fun part about this is you can add any vegetables you have on hand. Baby corn works great here, sugar snap peas, green bell pepper. Be creative.
Juice and zest of 1 orange
3 tbs soy sauce
1 tbs brown sugar
1 tbs cornstarch
Drizzle of Rice Wine Vinegar
Hot Sesame Oil (optional, but I love it)
Crushed Red Pepper
Fresh Basil
1/4-1/2 head broccoli
1/2 red bell pepper, sliced
1/2 onion, sliced
handful of mushrooms, sliced
2 garlic cloves, minced
small piece of fresh Ginger, chopped
salt/pepper to taste
Peanut oil (if you don't have any olive oil is ok)
have a carrot, sliced thin
Whisk together the orange juice and zest, soy sauce, brown sugar, cornstarch and rice wine vinegar. Now with the sesame oil you can either add it in now or once it's served. I did both, because well I love it. Whisk it until the cornstarch has dissolved and set aside.
Drizzle a little olive oil in a large skillet or wok and let it heat up. Add in the onion, pepper, garlic, ginger, carrots, broccoli and mushrooms. Sprinkle some salt, pepper and crushed red pepper (if using) give it a good toss. Let them cook about 5 minutes. If the broccoli and carrots aren't tender enough for you, you can add in a little chicken broth to "Steam" them. Just barely enough to cover the bottom of the pan, on high heat and cover until evaporated. I personally love my veggies with a little bite, the choice is yours.
Take the veggies out and transfer to a dish. Add in a little more peanut oil and pour in the chicken, add a little more salt and pepper, about a quarter of the orange soy sauce liquid. Let it cook until the chicken is nice and brown. Return the veggies to the pan, stir in the basil and the rest of the orange and soy sauce liquid. Cook stirring until all the flavors have incorporated and the sauce is nice and thick. Serve over rice or noodles and enjoy!
Variations: In addition to adding any vegetables you'd like, you can also make this completely vegetarian. Don't add any meat at all.
