Almond Crusted Sambuca French Toast w/caramelized Banana's
This breakfast is great for the weekend, a gathering or just having guests over. Honestly? I even love breakfast for dinner. Serve up a nice fruit salad, maybe some bacon or sausage, eggs even? I actually had this for breakfast today. I feel so guilty. Oh the things I do for my followers, forced to try all these boozy meals for you guys. :::dramatically throws hand on forehead::: Is anyone buying this? No. Didn't think so, I love doing this!!!
I used 8 slices of Pepperidge Farm White Bread. I like how it holds up, and it's thicker then any other white bread in my opinion. You can use any bread that will hold up to a good soaking.
1 Cup Heavy Cream, Whole Milk or Half & Half
3 large Eggs
2 Tablespoons of Honey
1/8 cup of Sambuca
3 tablespoons fresh squeezed orange juice, or orange liquer
1 teaspoon almond extract
1-2 cups almonds, you can use sliced, or crushed.
Mix together the heavy cream, eggs and honey. I make mine the night before and let it sit in a sealed tupperware container. It saves time and helps the flavors meld together nicely.
When you are ready to use the custard, mix in the Sambuca, orange juice/liquor and almond extract. In a shallow bowl pour in the almonds.
Heat a skillet with butter.
Dunk each slice of bread in the custard coating really well. Let any excess drip off. Then dip into the almonds coating well on each side. Cook the french toast on each side until nice golden brown. Repeat this step for all of the bread.
Now for the Caramelized Banana's:
I sliced up one banana (not everyone likes them) I let the banana slices soak in enough Sambuca to just cover them while I cooked the french toast.
Once the french toast was done, I melted some butter, added the banana's, and let them get nice and brown and caramelized on each side. You want to keep the heat kind of high so you get that gorgeous color/texture. I drizzled them on top of the french toast along w/some maple syrup and I devoured them!
