Brown Rice & Vegetable "Fritters"
Ok I know I've been slacking on the Vegetable friendly recipes here. So Veggie lovers this one is for you!
2 cups cooked brown rice
4 eggs, beaten
1/2 flour
s/p to taste
1/2 cup grated pecorino romano cheese
1 small red bell pepper, chopped finely
1/2 head of broccoli, chopped small
1 small onion of your choice, chopped finely
Fresh seasoning of your choice, I used fresh thyme
Combine the rice, eggs, s/p, cheese, pepper, broccoli, & onion together in a bowl. Roll out the fritters, or something similar to a crab cake, not overly thick. Pop in the freezer for about 20 minutes to firm up.
Heat olive oil in a large skillet. Dip each fritter in the flour dusting completely. Fry on each side for 4-5 minutes or until light golden brown.
I served mine w/a mixture of sour cream and sweet chili sauce. So good! Enjoy.
Feel free to mix up the vegetables, use grated carrot, maybe some zucchini (squeeze out access liquid before adding to rice mixture), you could probably even do this with risotto & white rice. Have fun!
