Garlic Bread with Mozzarella Cheese



This is my favorite way to have garlic bread. The real deal! Nice and cheesey! I'm pretty sure your guests and kids will agree.


One loaf of Italian bread ( I used Ciabatta Bread )
Butter
Olive Oil
Roasted Garlic
Pecorino Romano
A good handful Fresh Parsley
Mozzarella Cheese

Preheat oven to 350

This is another recipe with no measurements. It's one of those things you add a little of this, and a little of that. Some people LOVE garlic, while others just want a taste. Since this is garlic bread I would hope you wouldn't be afraid to pile it on.

I used six cloves of roasted garlic. Try not to get scared, you can use less if you want, but these loaves can be big.
Mix together olive oil, roasted garlic and parsley. Kind of mash up the garlic as you mix. Slice bread long way in half. Spread butter on one side of the bread. Drizzle the olive oil mixture on the other. Sprinkle pecorino romano cheese on both sides. Put the halves back together. Wrap in foil and bake for five minutes. After five minutes, open the bread and keep it on the foil, sprinkle mozzarella cheese on both sides of the bread, making sure not a corner is missed, pop back in the oven until the cheese is melted and serve. Enjoy!
