Ok this is a cross between Tropical and Cajun. The shrimp are marinated in Cajun seasonings, while the pineapple and black beans remind me of something tropical. In any event this is healthy and very flavorful. Give it a try!
1 pound Shrimp (I used Frozen)
1 cup fresh Pineapple
1 cup Edamame (I used frozen shelled)
1/4 cup fresh Cilantro
1 small can of Black Beans, rinsed and drained
1 red bell pepper, chopped
Spinach to lay down as the base of your salad
1-2 Tablespoons of Cajun Seasoning (you can make your own I'll show you how)
Sprinkle the Cajun Seasoning on the Shrimp and let marinate for about an hour.
In a skillet heat up some olive oil. Add in the red peppers and saute for about 3 minutes. Add in the edamame and cook until thawed out 4-5 minutes. Stir in the black beans and stir until just heated through. Pour mixture in a bowl, season with salt and pepper and fresh Cilantro, give it a good toss. Now cook the shrimp for about 2 minutes on each side. Gently mix the shrimp into the black bean mixture, spoon onto spinach. Add a few chunks of pineapple on top and enjoy! Very easy, tons of flavor, and you won't feel guilty eating it.
Cajun Seasoning:
2 teaspoons salt
3 teaspoons garlic powder
4 teaspoons Hungarian Paprika
1 teaspoon black pepper
1 teaspoon Onion powder with scallion
1 teaspoon Cayenne pepper
1/2 teaspoon Oregano
Mix together and store in an airtight container for up to 3 months.
