Eggs Baked in Tomatoes



A lot of people have been asking for more low cal meals. This one can be served as breakfast, brunch or lunch. Honestly I hate the word "dieting". I never want to eat "diet" food, who does? So I enjoy making low calorie "healthier" versions of food with tons of flavor. I hope you enjoy it.

I made this for just one (myself) so of course double or even triple the recipe to suit your needs.

Preheat oven to 350

Scoop out the top of a tomato. Salt it really well, set it upside down to drain for a good ten minutes. Season the inside with pepper and oregano.  Basil and sage are also herbs that would go great with this to. Bake the tomato for about 15 minutes until just tender. Crack an egg in and cook another 5-8 minutes.

I served this up with well dressed kale. A little olive oil, lemon zest salt and pepper. Whole grain toast and you have yourself a good 250 calorie meal.
