Blueberry-Lemon Cake






Well it's Mother's Day tomorrow. I was going to make Tres Leches for my son and I to share. However I forgot to grab the items when I went shopping the other day. So I decided to see what I had already to bake a cake with. Blueberries and lemons! My all time favorite is blueberry and lime together. Yum!  As for the filling I just kind of winged it :)


3 cups all purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1 cup milk
2 cups sugar
4 egg yolks
the juice and zest of 1 lemon
1 pint of blueberries


Preheat oven to 350
Whisk all the dry ingredients in a bowl. The flour, baking soda and powder and sugar. Next add in the egg yolks one and milk with a hand mixer. Finally the zest and juice of one lemon. Fold in the blueberries. In a springform pan butter and flour it real good. Bake in the oven for 35 to 45 minutes or until a knife comes out wet but no cake sticks to it.  Let it sit at room temperature to cool.  Then cut in half to make two pieces.


For the Filling/Topping:
1 cup milk
2 tablespoons flour
2 tablespoons butter
zest of 1 lemon
juice of 2 lemons
3/4 cup sugar


In a sauce pan pour all the ingredients in. Place on the stove and boil whisking constantly until desired thickness. Strain and let cool room temperature.
Pour half of the mixture on the first layer of cake. Put the second piece of cake on top and pour the remaining mix on top. Let it run down the sides. Garnish w/more blueberries, lemon wedge and confectioner sugar. Enjoy!
