Zucchini Cups




Ok so these may not be the most visually appetizing. However these are packed with lot's of great flavor. Perfect for appetizers too. You can use green Zucchini instead of yellow or use cucumber as a "no bake" version.  These are perfect for kids as well.


2 yellow zucchini, cut in about 3/4 sections
handful kalamata olives, chopped
1/4 cup feta cheese
handful fresh cilantro, chopped
salt/pepper to taste
about 3 tablespoons of red onion
cherry tomatoes, or large tomato sliced


Preheat oven to 400


First you want to scoop out the inside leaving the bottoms in tact. You can do this with a teaspoon. In a bowl and red onion. Sprinkle a little salt and pepper, stir and taste. I didn't use exact measurements as it really is all up to you on what you enjoy most. That is the joy of cooking! Add more olives, less feta, more red onion and less cilantro. Whatever you wish.  Feel free to change up the stuffing for something different too!  Ok so now that you have tasted and decided on what you want to fill these with, do just that!  Finally top with tomatoes and bake for about 20 minutes or until fork tender.
