Hey guys How did you celebrate Cinco De Mayo? My son & I don't go all or anything Just a simple meal together. But to me those are always the best day, Holidays or not. Anytime I can get him in the kitchen with me is a great day! These are a fun way to eat tacos for the kids. Also it's healthier version & carb free for the adults! I was honestly just too lazy to make homemade tortilla's today. So I substituted them with Romaine lettuce leaves!
As always keep in mind it's just my son and I, so double and or even triple this recipe.......
1 center cut pork chop, sliced thin
1/4 teaspoon of paprika
salt/pepper to taste
1/4 teaspoon of cumin
1/4 teaspoon garlic powder
4 to 5 Romaine lettuce leaves, cleaned and ends trimmed
Simple Salsa:
1 large vine ripe tomato, chopped
about 1/4 cup red onion, chopped
good handful of fresh Cilantro, chopped
salt/pepper to taste
Juice of 1 lime
Mix all together and store in the fridge until you want to use it.
In a hot skillet add the pork and seasonings. Since it's sliced thin it will cook very fast. Do not over cook or you will have a rubber mess! You will actually see it changing color and cooking.
Next get your romaine leaves ready and fill with pork. Top with salsa, garnish lime wedges and fresh cilantro and serve.
