Breakfast Muffin




I'm not generally a breakfast person which I know is horrible.  Actually I'm not a morning person at all!  Until I've had a couple of cups of coffee I resemble Darth Vador.  However once in a while I have a craving for a little something. I try to make it some what healthy when cooking breakfast. Although this coming from the girl who eats cold pizza right out of the fridge!  The sandwich looks bigger then it was, honest it does ;)  Onto the recipe............


2 Whole Grain English Muffins
1 egg, 1 egg white
part skim cheese of your choice
2 slices of ham or you can use turkey bacon
1 tomato
salt/pepper to taste
fresh chives, chopped. (feel free to use fresh basil, thyme whatever you like)


Break the eggs into a bowl. Remember one full egg and we are only using the white of another. You can save the other yolk for another time.  Add salt and pepper to taste, fresh herbs and whisk well. Pour into a hot small non stick frying pan sprayed with fat free olive oil. It should cook up pretty quick. In the meantime toast two english muffins. Top the egg with cheese about a minute into the cooking process.  Do not let the eggs brown or you will have a rubber egg :/ just enough until al the liquid is gone and they are nice and fluffy. Add the slices of ham, one on each muffin, top with egg and tomato slices. Serve with fresh fruit, juice, and or coffee. Enjoy!
