Stuffed Pork Chops








2 thick center cut boneless pork chops
1 apple peeled and cubed, red delicious or green apple
1/4 cup onion, chopped
1 stalk celery, chopped
1 teaspoon ground thyme
salt/pepper to taste
1/2 teaspoon garlic powder


Preheat oven 350
With a sharp knife pierce a hole in the center of the pork chop and slide the knife sideways about half inch to the side.  I didn't saute my stuffing because I like the crunch. However you can saute the onions, celery and apple and season them. Either way mix all the ingredients together and spoon stuffing mixture inside the chops, pushing as far in as you can get. You may have a little left over. Just pour the rest over the top of the pork chops. In a shallow baking dish pour a little apple juice in and lay the stuffed chops in the dish.  Bake for about 30 minutes and serve.
