My thoughts on adding eggs; I wasn't fond of the sunny side up, but I did enjoy the scramble! I had originally put two solid yolks in hopes to have two sunny side up eggs. However one broke and I just went with it. I liked the broken one better! You don't have to add eggs. You can even use potatoes instead of apples if you don't like the salty-sweet taste. Use different spices and meat. Have fun with it!
By the way did I mention we ate this for dinner?
2 piece of Nan round bread
3 sausage links
Fresh Tarragon (use your judgement, I was too hungry and forgot to measure haha)
grated cheddar cheese
3 green onions chopped
2 eggs (optional)
1 apple (your choice)
salt/pepper to taste
Heat oven to 400
Cook the sausage and chopped apples with salt and pepper. Add the Tarragon at the end. Brush extra virgin olive oil onto the nan bread, both sides. Top the bread w/the sausage mixture. Then add green onion and the eggs. Be careful putting the eggs on. Try to find a divit if you will. Make a happy little home so they don't fall off!! Finally finish it off with as much cheddar as you want. Bake for 10 minutes and serve. Watch not to over cook the egg.
