Mini Broccoli Mac-N-Cheese Cups



These are so much fun for kids!  Who am I kidding, I loved them too!






Puff Pastry cups (as many as you need)
1/2 pound elbow macaroni (really any short pasta will do, I used wheels since it was fun for the kids)
1 1/2 tablespoon of butter
1 1/2 tablespoon flour
1/2 tablespoon powdered mustard
1 1/2 cup of milk
1/2 tablespoon onion powder
1/2 tablespoon garlic powder
pepper to taste
1 bay leaf
1/2 cup of broccoli
12 ounces cheddar cheese, shredded.


Bake the puff pastry as directed and set aside.
Heat the oven to 350
Cook the pasta as directed.  In another saucepan melt the butter, add in the flour and spices and move around for about five minutes.  Make sure that it is free of lumps.  Add in the milk and bay leaf.  Cook on medium-low until it reaches a boil.  Keep stirring so nothing sticks to the bottom.  Add in 3/4 of the cheese and stir.  Take the bay leaf out and pour the cheese mixture into the pasta and broccoli. Mix in the remaining cheese,fill puff pastry,  top with breadcrumbs and bake for 20 minutes. If you don't want to use the puff pastry that's fine, bake in a baking dish for the same amount of time.
