Broccoli stuffed chicken



2 boneless skinless chicken breasts
1/4 cup of chopped broccoli
1/4 cup of chopped baby corn
1 tablespoon fresh parsley
1 tablespoon fresh oregano
1/4 cup grated locatelli cheese
2 cloves of garlic
salt/pepper to taste
1 half bottle of "Ken's lite Northern Italian w/Basil and Romano" dressing


Marinate chicken in the Italian dressing for at least two hours.  Preheat oven to 350.
Saute chopped garlic, fresh herbs, salt/pepper, and veggies in a skillet for about five minutes.  Mix with cheese and let cool.  Press a knife into the tip of the chicken going straight through until you almost hit the other end.  Stuff chicken and place in a shallow baking dish.  Bake for about 30 minutes or until juices run clear and no longer pink.  I served this dish w/Rosemary potatoes.  You can find that recipe located on the right hand side of this page.
