Buffalo Chicken Dip, So bad it's good!



It's Friday! The one day I don't usually cook. The one day where I either order food or go out to eat dinner! I don't really consider this to be "cooking". However I have came up with an appetizer. I'm going to order pizza later since I have my little guy this weekend :) I thought how great this would go with it!  Although it contains hot sauce it is kid friendly. You just can't put the entire bottle in! I suggest Franks original. It's mild and if you follow the instructions no one will get hurt :) Just be sure to wash your hands really well after eating these. Or who knows which body part will be tingling......with pain later :O. If it's adults indulging in this treat by all means pile on the hot sauce!


1 pound boneless skinless chicken breast, boiled and shredded
8 oz. Franks original hot sauce
8 oz. cream cheese (you can use fat free)
8 oz Blue cheese ( I use Marzettis' it's thick and creamy and perfect for this.)
1/4 cup chopped celery
4 oz. Sharp Cheddar cheese (or Mexican cheese blend)


Preheat oven to 350


In a saucepan add cream cheese and blue cheese. Melt together whisking until smooth, creamy and free of lumps. In the meantime in  a glass baking dish layer the chicken and hot sauce and let sit while the blue cheese mixture cooks. Top the chicken with the blue cheese mixture, do not mix together. Next layer the celery in and bake for 25 minutes. Take the dip out and top it with cheese and bake 15 more minutes. Serve with celery or tortilla chips and indulge!!!

The best part is digging in to get every layer! It's like cracking the top to a pot pie and getting a little of everything! I'm currently elbow deep into this dip...........
