Quiche Lorraine "My Way"



Since it was just my son and I this Easter I didn't go all out.  It was very quiet and relaxing. We even got in a little park fun!  I was so happy to share some old family r ecipes with him and watch him enjoy them!  That was the highlight of my whole day. To sit there after dinner sharing a piece of Casata! That recipe will be next and you don't want to miss it.   I hope you all had a great Easter as well. Here was the spread for Easter Dinner:


1 1/2 cups light cream
4 eggs, 2 yolks, 2 whites
1/2 onion, chopped
1 bunch fresh Thyme
salt/pepper to taste
1/2 cup shredded Gruyeye Cheese
7 oz ham, cooked and cubed ( I used a Ham Steak )


Preheat oven to 400
I cheated and used a frozen pie crust. Yes you read that right. Gasp!   You can of course use your own or cheat like me. I won't tell. :)
Prepare pie shell as directed on the package.
In a frying pan saute the onions and ham. Remove Thyme leaves and add into the onions and ham along with salt and pepper to taste. Stir around until the onions are nice and soft. Pour into the pie crust.  Then top with the Gruyere cheese. In a bowl wish 2 eggs and 2 egg whites together with the cream.  Pour over the top of the ham mixture until it just reaches the bottom of the pie crust pattern. Bake for about 40 minutes or until center is set and it's nice golden brown. Check it once in a while the pie crust may brown too much and you will have to cover it with foil.  Allow to cool slightly, cut and serve. Any remaining Quiche pop in the fridge! Enjoy.
