Chicken & Pasta Bake



I got in late last night.  I had no idea what to make.  I usually make a big pot of Gravy every Sunday. However no one was home to enjoy it.  So this is what I came up with :)


1 boneless skinless chicken breast, cooked and cubed
1 cup any type of  short pasta (elbows, penne, rigatoni etc. etc.)
6 basil leaves chopped
1 cup whole peeled San Marzano tomatoes with juice, chopped
1 cup Fontina cheese, cube
1 zucchini, chopped
handful broccoli florets, chopped


Preheat oven to 350
Boil water for pasta on stove.  Pour in the pasta and cook for only five minutes.  Until just tender.  Keeping in mind this is going in the oven, so you don't want pasta mush.  In a baking dish, add in pasta, and chicken.  Season the vegetables with salt and pepper and add those to the dish.  Season the tomatoes with salt, pepper and 1 tablespoon of butter.  This helps round out the flavors and reduces any acid.  Pour sauce over top of all the pasta, chicken and veggies. Add in the fresh basil and give it a good mix and top with Fontina cheese.  Bake for about 20 minutes or until all the cheese is melted.
