Couscous lettuce cups



Bathing suit season is upon us!  So why not something flavorful and  healthy!!  This can be an appetizer, a side dish or a whole meal!


1/2 cup fat free chicken broth
1/3 cup uncooked couscous
1/2 cup Kens Steak House Lite Northern Italian w/Basil & Romano (or any fat free dressing)
1 roma tomato, chopped
1 stalk celery, chopped
1/2 cup Feta Cheese
Romaine Lettuce


In a saucepan boil chicken broth. Pour in couscous, stir well, cover and take off heat. Let sit five minutes then fluff with a fork.  In the meantime, chop the celery and tomatoes. In a bowl mix couscous, vegetables, and salad dressing. Place a piece of romaine lettuce on a plate and add with couscous mixture.  Top it off with a handful of Feta cheese.
A nice addition would be walnuts and or chicken too
