
I made this for just myself. So feel free to double and triple this recipe.
5 large shrimp
1/2 cup orzo pasta, cooked
Kalamata olives, handful
1 small clove garlic, minced
couple teaspoons onion, chopped
fresh mozza, or feta
couple tablespoons roasted red peppers ( I used jarred)
Dressing:
1 teaspoon dried oregano
1 tablespoon extra virgin olive oil
pinch of sea salt
pinch of red pepper flakes
Freshly ground black pepper to taste
1 tablespoon fresh lemon juice
Splash of apple cider vinegar
couple leaves finely chopped fresh Italian parsley
Heat olive oil in a pan and saute garlic and onion. Add orzo and shrimp and cook for about 3 minutes. Until shrimp is cooked completely. Pour into a serving bowl and add olives. In a different bowl whisk together all ingredients for the dressing and set aside. Top with cheese, pour the dressing and mix well. Enjoy! You can also eat this as a cold salad as well.
