Cranberry-Pomegranate Infused Granola




Yummy!  This homemade granola is great for cereal, or just to munch on to help get you through the day! Loaded with vitamins and minerals!  You can switch up the fruit and use any kind you'd like!


2 cups old-fashioned rolled oats
1/2 cup of sliced almonds
1/2 cup of  Quinoa
1/2 cup orange blossom honey (or regular honey)
1/4 cup light brown sugar
1 ounce unsalted butter
1/2 teaspoon salt
1 cup dried cranberries infused w/pomegranate juice (or any dried fruit is fine)


Heat oven to 350


On a baking sheet add nuts, Quinoa, and oatmeal.  Bake turning twice for 15 minutes.  In the meantime in a saucepan heat butter, b. sugar, salt and butter until b. sugar is completely dissolved. Once the oats and nuts come out turn the oven down to 300.  Pour the brown sugar mix over the oats/nuts in a large bowl and blend well.  Add in the dried cherries mixing together. In a 9 by 9 glass baking dish spray with cooking oil.  With a spatula push in the granola mixture spreading evenly.  With cold wet hands press down the granola.  Bake for 25 minutes or until golden brown.  Let cook completely and break up into pieces.  Store in an air tight container for 7 days.
