Low-Fat Lime Ricotta/Yogurt Cheesecake w/Strawberries & Nutella
Ok so today is national cheesecake day! Who knew? I didn't! I saw it on Facebook and figured I had to join in! I only had Ricotta Cheese & Yogurt on hand. So this isn't your ordinary cheesecake. It's not completely sin free here guys. It's "lighter", fluffier, airy-er (is that even a word)? Well it is today. So if you are thinking that you will be biting into this rich sinful orgasmic cheesecake? You are right! I didn't make it so it's ten feet tall either, so if you think it's going to rise to the top? It isn't, not to the top of the cake pan anyway. Perhaps the top of your recipe box :)
15 oz container of Part Skim Ricotta Cheese
1 Cup fat free vanilla yogurt, of your choice
3/4 cup sugar
2 eggs
Juice of Half a Lime
Zest of Half a Lime
Strawberry Preserves
Strawberries
Nutella
Preheat oven to 350
Mix everything together until well blended. Pour into a spring pan (the bottom comes out). Bake for 30 to 40 minutes until it sets in the middle.
Let cool at least 20 minutes. I know it will be hard, but you have to.
Spread some preserves over top, layer with strawberries, drizzle melted Nutella over the top. Pop in the fridge until you are ready to serve. I'd say at least a good hour. It's really that simple.
Note: If you want to switch out the yogurt for 1 package of low-fat cream cheese you can. I just used what I had on hand.
