Ok as promised here is the Mahi Mahi I made the other day. If you remember I bought this when I picked up the shrimp for the shrimp boil. I never tried making Mahi Mahi on my own before. I have just always heard really great things about it. I have to be honest here, this really isn't my favorite fish. I think it has the same texture as Salmon but completely different taste. There isn't any other fish I could compare it to as far as taste is concern. Although I have read that some would compare Mahi to Swordfish. I wouldn't know because I have never tried Swordfish. See even I have so much to try and to learn in the wonderful world of food! Now that I think of it I guess this can be compared to Tuna. Although not my cup of tea either. In any event I enjoyed the flavor I added to this fish. But it isn't all about flavor with me. It has to be a good balance of texture and flavor for me to really enjoy something. If the texture is all wrong? Forget it! What fish doesn't go well with salsa? In my opinion there isn't any fish that can't be accompanied with some type of salsa. So why not mango!
Mango Salsa:
1 ripe mango, peeled, and cubed
1/4 cup cilantro
juice of 1 lime
sea salt to taste
1 white or red onion, chopped
1 clove garlic, minced
2 roma tomatoes, chopped
1 can black beans, rinsed
Combine all ingredients in a bowl. Mix well, cover and pop in the fridge until your ready to use it.
I made mine in a grill pan, but you can use an outdoor grill.
2 fillets of Mahi
Sea salt, pepper to taste
juice of 1 lime
Now some people cook this until it's just translucent on both sides, just a couple minutes. Me? I like it to be cooked through. So I did about 4 minutes on each side. The choice is yours really.
Top it off with your mango salsa and serve!
