Orange Yogurt Cake w/Nutella Glaze

 



This cake should be called "addiction".  I cannot open my mouth wide enough to shovel it in!!  It's a "lighter" cake, no butter or vegetable oil.  So you can have a bigger slice and not feel as guilty!!


1 1/2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup plain yogurt  ( I used Dannon light and fit)
1 1/3 cup sugar, divided
4 large eggs
2 teaspoons grated orange zest
1/2 teaspoon vanilla extract
1/2 cup olive oil
1/3 cup freshly squeezed orange juice


For the Glaze:
Mix equal parts of Nutella and freshly squeezed orange juice together.  Heat in the microwave until nice and smooth.  Drizzle desired amount on top of cake and dig in!


Preheat oven to 350.  Butter and flour a round spring form cake pan.  Average size...9 inch.


Mix together the flour, baking powder, and salt into 1 bowl. In another bowl, whisk together the yogurt, 1 cup sugar, the eggs, orange zest, and vanilla. Slowly whisk the dry ingredients into the wet ingredients. Fold the olive oil into the batter, making sure it's all incorporated. Pour the batter into the prepared cake pan and bake for about 40 minutes, or until a toothpick placed in the center of the cake comes out clean.


Meanwhile, cook the 1/3 cup orange juice and remaining 1/3 cup sugar in a small pan until the sugar dissolves and the mixture is clear. Set aside.


When the cake is done, allow it to cool in the pan for 10 minutes. Carefully place on a baking rack over a sheet pan. While the cake is still warm, poke holes with a tooth pick all over the cake; pour the orange-sugar mixture over the cake and allow it to soak in. Cool.


Then glaze it (or pour on as much as you want) w/the Nutella mixture and serve.  It won't last long I promise!
