Blueberry-Lemon Cobbler

 

Can we say heaven in a bowl?



2/3 cup sugar
2 tablespoons cornstarch
3/4 cup water
3 cups fresh blueberries
1 teaspoon melted butter
1 teaspoon ginger
1 cup sifted flour
1 1/2  baking powder
1/2 teaspoon salt
1/3 cup milk
3 tablespoons melted butter
4 teaspoons freshly squeezed lemon juice
1 teaspoon lemon zest


Heat oven to 425


In a saucepan combine sugar and corstarch, stir in water.  Bring to a boil; stirring constantly for one minute.  Add lemon juice, lemon zest, and blueberries, mix and add to lightly buttered 9 inch baking dish.   Sprinkle with ginger and drizzle 1 teaspoon melted butter.


Sift together the flour, baking powder, and salt.  Pour milk and 3 tablespoons melted butter into a measuring cup; add flour to mixture all at once.  Stir just until mixed and moistened and forms a ball.  Drop spoonfuls onto the blueberries and bake for 20 to 25 minutes or until lightly browned.  Serve with ice cream, and or whipped cream.
