Pineapple cheesecake bars w/chocolate graham cracker crust



I bought two cans of sliced pineapple this weekend. I swear my son would eat it everyday if he could. He wanted me to make something with it, but he always says "surprise me mommy." Hmm ok time to put my creativity to the test yet again.   I cannot seem to make a pineapple upside down cake to save my life....yet!  Hmm what to do? I thought outisde the box on this one. Or so I thought! So far the feedback has been really great! I thought people might say yuck chocolate and pineapple?! She's off her rocker!  However  this creation tastes really good if I say so myself! :)


Basic Chocolate Graham Cracker Crust:


1/4 cup sugar
1/4 cup butter, melted
1 sleeve chocolate graham crackers, crushed real fine


Preheat oven to 375
In a large bowl mix all the ingredients together. Take a  pan or any some what deep pan will do, and pour the mixture inside. Press down molding out your crust. Place in the oven for 8 to ten minutes. I used a rectangle brownie pan. If you don't have enough crust you can just simply double it. Take it out and let it cool completely.
Next Preheat oven to 350
Choc. Chip Pineapple Cheesecake:


1  8 oz. package cream cheese (I used fat free)
10 oz can pineapple, crushed
1 cup powdered sugar
1 egg
1/4 cup granulated sugar
1/2 teaspoon vanilla
1/4 cup chocolate chips


Mix cream cheese and 1 cup powdered sugar until frosting texture. Add egg, sugar, crushed pineapple and vanilla extract, mix thoroughly. Fold  in 1/4 cup chocolate chips.  Bake for 15 to 20 minutes or until batter is set. Remove from oven, let stand for 1 hour and cut into bars.The rest can be wrapped and stored in the fridge.
